This is the best cut out of the hog's shoulder.  The exterior of the coppa is rubbed with our chorizo seasoning.  It is sliced paper thin which gives it a smooth texture.  This product is ready to eat.  Each package is about 8oz and is sold by the package. $10.25/unit.
