Ultimate Meatballs

It’s back to school time at our house and we already have what I am calling the “back to school virus” making its way around the house. Now it’s my turn! The last thing I want to worry about when I’m sick is what I’m going to make for dinner. I am so glad I recently made a huge batch of my Ultimate Meatballs. I always make at least 3 batches of meatballs at once and then freeze them so that I can have them on hand when I need something quick and easy.

Who doesn’t love a big plate of spaghetti and meatballs?

My Ultimate Meatballs are so versatile and cans be used in a variety of cuisines. The first time I ever made meatballs, I made Swedish Meatballs for a 6th grade project. Those Swedish Meatballs earned me the first praise I had ever received for cooking!

Just add your favorite BBQ sauce and throw in the oven for a quick snack or meal. How easy is that?!

There are so many ways to enjoy my Ultimate Meatballs! You could add your favorite buffalo wing sauce or a sticky teriyaki sauce. You could cut them in half and use on your homemade pizzas. You could add enchilada sauce, top with cheese and serve over Spanish rice for a Tex-Mex entree. Add them to soups, like Italian Wedding soup. There are just so many ways to enjoy my Ultimate Meatballs! What’s your favorite way to enjoy meatballs? THE ULTIMATE MEATBALLS 1 lb. Triple S Farms Ground Beef 1 lb. Triple S Farms Ground Pork 1 medium onion, minced 2 cloves onion, minced 2 Eggs, beaten 1 C. Fresh bread crumbs 1/2 C. Parmesan cheese(or your favorite cheese) 1/2 C. Fresh parsley, chopped 1 Tbs. Worcestershire sauce 2 tsp. Salt 1 tsp. Pepper Preheat oven to 400°. Add all ingredients to a large bowl. Mix gently. Overworking the mixture makes for a less tender meatball. Use a cookie scoop to scoop out golf ball sized meatballs onto a parchment paper lined sheet tray. Bake 20-22 minutes, until no pink remains inside meatball.
